Warm Sweet Potato, Mushroom & Spinach Salad
Ingredients
- 1 lg. sweet potato
- 12 mushrooms
- 2 bowls of spinach (wilted)
- 2 Jalapeno peppers
- 1 doz. Cherry Tomatoes
- Apple Cider Vinegar
- Cinnamon
- Paprika
- Salt
- Olive Oil
Instructions
- Preheat oven to 375 degrees
- Cut sweet potatoes into bite size chunks and place on a baking tray
- Drizzle with Olive oil, salt, paprika & cinnamon
- Bake for 15-20 minutes or until soft
- In the meantime, slice the mushrooms and stir fry with olive oil, salt, 2 tap of apple cider vinegar and chopped jalapeños
- This should take about 7 minutes; right at the end add the spinach and allow to wilt. This happens really quick
- Slice Cherry tomatoes
- Once everything is cooked is cooked mix in tomatoes and serve
